- 50g butter (or coconut oil)
- 500 g prawns scampi or large prawns
- Salt and pepper, to your liking
- 1 tablespoon crushed garlic
- 1 squeezed lemon juice
- 120 ml chicken stock (or just water)
- 30g minced parsley
- 100 g grated fresh parmesan
- 230 g of spaghetti
1. Boil a large pot of water.
2. Add the pasta to cook according to the instructions on the package.
3. Melt the butter in a large skillet over medium heat.
4. Add shrimp, salt, pepper and garlic.
5. Cook for three minutes, stirring occasionally, until the prawns turn pink.
6. Add lemon juice.
7. Pour in the chicken broth (or water).
8. Let it simmer.
9. Add the fresh parsley and parmesan. Save some for decoration.
10. Mix with the pasta.
11. Garnish with parmesan and parsley.
