Recipe source: eatwell101.com
Preparation: 10 mins - Cooking: 10 mins
- 450g raw prawns, medium size, peeled and deveined
- 4 medium zucchini
- 15 ml of olive oil
- 120 g unsalted butter, cut into pieces
- 4 cloves of garlic, finely minced
- 5 g of Italian spices (basil, oregano, sage, marjoram, savory...)
- a pinch of red pepper
- the juice of half a squeezed lemon
- 60 ml of chicken or vegetable stock
- spicy sauce according to your taste (I used Sriracha sauce)
- salt, freshly ground pepper according to your taste
- 30 g chopped fresh parsley
1. Wash and cut the end of the zucchini.
2. Using a spiralizer or julienne, make the zucchini spaghetti. And save for later.
3. In a large skillet, heat the olive oil and 60 g of butter over medium heat.
4. Lay the shrimp in the pan in a single layer and sprinkle with salt and pepper.
5. Cook for one minute without stirring, so that the bottom of the shrimp browns slightly.
6. Add the minced garlic, the Italian spice mix, the red pepper and mix everything for two minutes.
7. Transfer the shrimp to a shallow dish.
8. In the same pan, add the remaining 60 g of butter, the lemon juice, the chicken (or vegetable) broth and the hot sauce.
9. Simmer for 2 to 3 minutes, stirring regularly.
10. Add the zucchini noodles and cook until tender, about 2 minutes, stirring regularly.
Note: if the sauce is too liquid, let it reduce a little.
11. Add the grilled prawns to the pan and stir for another minute.
There you go, your sautéed shrimp dish with lemon butter and garlic is already ready :-)
Add the parsley and a little pepper and serve immediately with a few slices of lemon

Zucchini may leak water during cooking.
To avoid this, sprinkle them with salt and let them sit in a colander while you cook the shrimp.
Press it with your hands to squeeze them out and remove excess water.
Then rinse them well and drain them thoroughly before putting them in the pan.
