Zucchini spread recipe

In the February issue – in stores from Tuesday 16 January – you will find a recipe for soup in which you hollow out courgettes. You can use the pulp for a spread.

  • Half a zucchini (or zucchini pulp)
  • juice of half a lemon
  • grate of the lemon zest
  • 1 large tbsp tahini
  • little garlic powder
  • pepper

Blend the zucchini pieces finely in your food processor. Now add the tahini, lemon juice, lemon zest, garlic powder and salt and pepper and let it turn until it has become a smooth mass.


  • Half a zucchini (or zucchini pulp)
  • Spring onion
  • Basil leaves
  • Small clove of garlic
  • Lemon juice
  • 1 tbsp extra virgin olive oil
  • Pepper and salt

Blend the zucchini pieces in the food processor or blender and add the remaining ingredients.
