Nice light recipe:zucchini carpaccio

Do you fancy a light, healthy meal? This zucchini carpaccio not only contains many tasty vegetables, but also looks very colorful. And you're done in no time!

It is a fresh salad with tomato, chili, fresh basil and a topping of crunchy pomegranate seeds. This dish is served with a delicious fresh lime-coriander rice.

Ingredients

For 4 people

  • 2 packs of Tilda Steamed Lime &Coriander Basmati
  • 4 small or 2 large courgettes
  • 1 beef tomato, diced
  • 1 green pepper, seeds removed and finely chopped
  • 1 avocado, diced
  • a handful of basil leaves, torn
  • 4 tbsp olive oil
  • 1 pomegranate, the seeds

Supplies : mandolin (optional)

Preparation method

  1. Heat the rice according to the package and set aside.
  2. Cut the zucchini into thin slices with a mandoline or with a vegetable peeler.
  3. Mix the tomato, chili, avocado and basil in a bowl.
  4. Divide the rice among four plates and top with the zucchini slices.
  5. Spoon the tomato mixture over this and drizzle with olive oil.
  6. Season with salt and pepper and garnish with pomegranate seeds before serving.
