Ingredients for 4 people

- 4 beefsteak tomatoes (my favorite)

- 2 lawyers

- pine nuts

- 1 red onion

- parmesan

- pesto (or homemade pesto sauce recipe)

- olive oil

- lemon

How to

1. Cut the tomatoes into small cubes.

2. Drain the tomatoes of their excess water.

3. Salt them.

4. Let them rest for 2 minutes. The water will come out on its own.

5. Drain them.

6. Cut half the onion and the avocados into small dice.

7. In a bowl, mix the diced tomatoes, avocados and onions with the pine nuts.

8. Add a teaspoon of pesto sauce.

9. Add the juice of half a lemon and 2 tablespoons of olive oil.

10. Sprinkle with Parmesan and you're done.
