A new week, a new cheap recipe. This time it's the cheap chili con carne recipe at less than two euros a head. Ole!
Chili con carne is a Texan dish that is no more complicated to make than bolognese. Made from the same base of tomatoes, garlic, onions and minced meat, just add a few spices and red beans and you're done.
The ingredients for 4 people for this super easy recipe of the week:
--> 500g minced beef
--> 1 can of peeled tomatoes
--> 1 can of red kidney beans
--> 2 teaspoons of chilli powder, or 1 bird's eye chilli (dose according to your ability to resist, personally I like it when it's quite spicy)
--> 1 teaspoon of cumin
--> 1 teaspoon of oregano
--> 2 onions, 2 cloves of garlic
--> 25 cl of beef broth
For successful chili, I always use a pressure cooker type pot.
Brown the olive oil over low heat, and add the onions and the garlic, chopped into small pieces.
Once blanched, add the spices and then the meat. Cook for 5 minutes and add the broth and the peeled tomatoes. Simmer everything for 30 minutes then add the well-rinsed kidney beans and continue cooking for another 30 minutes, stirring occasionally.
The chili is ready. Serve with rice or salad and nacho chips. I made this recipe for some friends over the weekend and we loved it.
