Recipe:Vegan meal salad with penne and avocado

We are a bit tired of that eternal pasta pesto. High time for a new recipe; a mega well-filled vegan salad bowl with penne and avocado!

Ingredients

  • 4 BOON falafel balls
  • 1 avocado
  • 2 handfuls of fresh spinach leaves
  • 1 bell pepper
  • 1 red onion
  • 2 large tomatoes
  • 2 tbsp balsamic vinegar
  • 1 tbsp cashew paste (with the code: MARTJE you get a 5% discount on the entire range)
  • seasonings such as:salt, pepper, rosemary, thyme, oregano ect.

Preparation vegan meal salad with penne and avocado

Cook the penne for 5 minutes and fry the falafel in the pan for about 5 minutes. Cut the avocado, bell pepper, onion and tomato. Wash the spinach and cut the leaf a little smaller, now toss everything (including the penne and falafel!) together in a large container. Pour in the balsamic vinegar and sprinkle with the seasonings. Now transfer it into a nice wooden container and finally put the cashew paste over it. Enjoy!
