Are you planning an Easter brunch this weekend? Put a club sandwich with salmon on the table.
This crisp sandwich of thick slices of grilled white bread with smoked salmon, raspberry vinegar pickled red onion and homemade avocado spread is sure to please.

Slice the red onion and marinate in raspberry vinegar for about 15 minutes.
Remove the pulp from the avocado and mash it together with the Olio di Oliva Peperoncino and the juice of the lime. Stir and season with salt and pepper. Slice the cucumber and the hard-boiled egg. Toast the bread in a grill pan with a tablespoon of Baking &Frying Olive Oil per slice. Allow to cool slightly before making the sandwich.
Place lamb's lettuce on a slice of bread and place the cucumber slices on it. Spread a tablespoon of Club Sandwich Sauce on top, place the egg slices on top and then spread another tablespoon of Club Sandwich Sauce on top. Place a second slice of bread on top and spread with the mashed avocado. Place a little lamb's lettuce and the smoked salmon slices on top and put the red onion on top. Spread with a tablespoon of Club Sandwich Sauce and add salt and pepper to taste. Place the third and final slice of bread on top. Cut the sandwich in half and hold together with a toothpick.

Fun fact:when can something be called a Club Sandwich? The Club Sandwich originated in the United States sometime in the 1800s, but exactly where and when is not clear. He may have been first served at the Union Club in New York, but there are also sources that claim he was invented at a gambling club in Saratoga Springs, also in New York. The Club Sandwich quickly became popular and was already on menus throughout the United States by the end of the nineteenth century. A Club Sandwich traditionally consists of three, sometimes four, slices of lightly toasted bread, usually casino, toast, or cornbread. In between are two layers of toppings:meat (or fish, or vegetarian) and lettuce (or another vegetable). Bread and spreads must be absolutely fresh, and if the bread is not toasted it should not be called a Club Sandwich. The sandwich is cut diagonally, sometimes even twice, so that it becomes two or four triangular sandwiches. These are held together with skewers and served with fries or chips.
