Tonight we will serve these well-filled enchiladas with mushrooms.
For 4 people
1. Preheat the oven to 200°C.
2. Chop the mushrooms, finely chop the onion and shred the cabbage.
3. Fry the mushrooms, onion and cabbage in the oil.
4. Mix the Chunky Salsa Medium, the Enchilada Spice Mix and half of the cheese.
5. Pour half of the sauce over the vegetables and simmer for 2-3 minutes.
6. Divide the vegetable mixture over the Corn and Wheat wraps, roll them up and place seam side down in a greased baking dish.
7. Pour the rest of the sauce over the rolled enchiladas and sprinkle the rest of the cheese over it.
