Time for comfort food. You don't make these delicious tacos with meat, but with jackfruit, a fruit that is used as a meat substitute.
30 minutes preparation time + 30 minutes waiting time
If necessary, cut the strips of jackfruit a bit smaller and mix with the Mexican spice mix and 1 tablespoon of oil. Let marinate for 30 minutes.
Meanwhile, peel and finely chop the onion and garlic. Squeeze the limes.
Heat 1 tablespoon of oil in a pan and fry the onion with the garlic until translucent. Toss with the jackfruit strips and fry until light brown, stirring regularly.
Add the stock with the caster sugar and half of the lime juice. Let it simmer for another 5 minutes. Season with salt, both types of paprika, the chili and any remaining jackfruit marinade.
Cut the lettuce into strips. Rinse the beans in a colander and drain. Halve and peel the avocado, remove the pit and slice the flesh diagonally. Immediately drizzle the remaining lime juice over it, to prevent discoloration.
Heat the tacos briefly according to package directions. Fill them with the jackfruit mixture, divide the kidney beans and avocado over them and serve with a head of lettuce.
