Shakshuka is a Middle Eastern dish of eggs poached in a tomato sauce. Shakshuka was originally intended for breakfast, but it is also delicious for lunch or dinner.
For 4 people
Heat sunflower oil in a frying pan and fry the onion and garlic until the onion starts to become translucent. Add the paprika, cayenne pepper and cumin seeds, stir everything together. Add the orange bell pepper strips and diced tomatoes and season with salt and pepper. Fry the whole thing in the pan for 5 minutes, stirring occasionally.
Make 4 wells in the sauce and break in the eggs. Let it simmer for another 10-15 minutes on low heat until the egg whites have set.
Garnish the shakshuka with avocado slices and curly parsley. Divide the shakshuka among 4 plates and serve immediately.
