Recipe with Maho Nabé – Prawns in citrus juice

Ingredients for 4 people
- 8 king prawns or prawns
- 1 puff pastry (here gluten-free)
- 1 ripe orange
- Basil leaves
- Fresh mint leaves
- Tarragon
- Olive oil
- Salt
Steps
- Prepare the orange emulsion:squeeze your orange using a citrus juicer; then add a basil leaf. Leave to rest in the fridge.
- Shell the prawns and rinse them in clean water. Then, open them in half with a knife. Season with salt and pepper and drizzle with olive oil. Leave aside to cool.
- During this pause, chop the basil leaves with the tarragon and fresh mint. Then, mix them with the puff pastry. Place the finely cut prawns in the middle, forming a rounded structure.
- Put your casserole under the heat at a low temperature, adding 15cl of olive oil. Then, gently place your prawns wrapped in puff pastry. Salt lightly. Let everything brown at low temperature.
- While cooking, mix your orange juice-basil preparation by adding a teaspoon of olive oil.
- As soon as the prawns are ready, serve them immediately covered with a little orange sauce. The festivities can begin!
