Mix the pasta flour with the eggs, olive oil and a pinch of salt to form a firm dough. Knead well and let it rest for 10 minutes. The pasta dough is now ready for processing with the pasta machine.
1. Flatten the pasta dough with the palm of your hand to a thickness of about 4 mm.
2. Roll the dough through the pasta machine (on the thickest setting).
3. Fold the dough in half and roll it through the pasta machine again (on the thickest setting).
4. Dust the dough with a little flour and then roll through the pasta machine in progressively thinner positions until the second thinnest position.
Then roll the slice of dough through the spaghetti or tagliatelle cutter and place the pasta strands together in a pile to prevent them from drying out. Mix with some flour if necessary to prevent sticking. Bring a pan of water to the boil and cook the fresh pasta for 3 minutes.
