Supplies

  • Come 2x
  • Cotton tea towel
  • Glass and bottle cap (for cutting out the donuts)
  • Rolling pin
  • Broad pan for frying
  • Libra
  • Kitchen paper

Tips for preparing authentic American donuts

  • Because white sugar is less healthy, I use brown sugar as standard in my kitchen and that works fine
  • Only use liquid oil for frying, fat will solidify and form a layer on the donuts
  • Make the dough well in advance, since you have to let the dough rise 2x 1 hour for an optimal result

  • 50 ml Water (lukewarm)
  • 300 ml Milk
  • 125 gr Sugar

Take 1 tablespoon of the sugar and mix it with the yeast and lukewarm water. Let the mixture stand for 10 minutes (it will turn into a foamy mass that will rise; if not, your yeast is not good and you have to start over)

  2. In another bowl, mix the flour, vanilla sugar, rest of the sugar and salt together

  3. Add the yeast mixture to this and knead everything together well

  4. Melt the butter (note:it should absolutely not be too hot, lukewarm is sufficient) and add it to the dough together with the milk and eggs and knead it into a smooth dough. The dough should no longer stick to the hand, but should be flexible. If the dough is too wet, add some extra flour, dough that is too dry can be made more flexible by adding a little extra lukewarm milk

  5. Now set the dough aside for an hour under a damp tea towel to rise (note:I misjudged the proofing the second time, so my dough went over the edge and I ended up with donut dough on all sides)

  6. After rising, roll out the dough on a floured work surface to a sheet of 0.5 cm thickness

  7. Take a glass and cut out donught shapes. The middle hole is made by sticking a bottle cap in the middle

  8. Set the cut out donuts aside and let them rise for another hour under a wet tea towel

  9. After rising, heat the oil to 175°C and fry the donuts for about 2-4 minutes until golden brown. Turn the donuts halfway through, so that both sides get a nice color

  10. 10. Remove the donuts from the oil and drain on kitchen paper, this will result in less greasy donuts

Notes

You don't have to throw away the pierced holes of the authentic American donuts. You can also fry them. In America these are simply offered for sale under the name 'donut holes'. Ideal for example to let children snack.

Make your own glaze for donuts

Of course, regular donuts are delicious on their own, but they become even tastier with a glaze. Make the glaze immediately after baking and dip the donuts still warm in the glaze for best results. You can make glaze in two ways

Icing icing

Take about 150 gr of powdered sugar and mix this with about 75 ml of water (you have to do this by feel, the intention is that you get a white mass that is quite chewy). Want to make a colored glaze? Then add a little less water and a few drops of dye

Chocolate icing

To make chocolate glaze you can use special chocolate that is available in the supermarket or you can make it yourself. For this you use:

125 gr Dark chocolate (70% is the best)

100 gr icing sugar (sifted)

60 gr Butter (optionally replace with margarine, although I'm not a fan of that)

4 tablespoons cold water

  • Start by melting the chocolate pieces in a bain marie
  • Sieve the powdered sugar and stir it little by little into the melted chocolate
  • Let the butter come to room temperature and add this little by little
  • Finally add the water (also little by little)
  • Directly dip the donuts in the chocolate

After applying the glaze, you can add chocolate sprinkles or other decorations for a festively decorated donut. Are you having a party? Then use a donut wall.
