Do you like bread? Me too, I love !
How about making it at home yourself? Well, it's easy! All you need is the right recipe.
And just for you, here is certainly one of the best bread dough recipes.
The advantage of this bread dough recipe , is that it can of course be used to make bread, but also to do many other things.
For example, this recipe is perfect for preparing pizzas , flambé pies, pies and even donuts .
For 2 loaves:
- 60 cl of hot water
- 2 tablespoons of yeast, like this instant baker's yeast
- 10 cl of honey
- 750 g all-purpose flour (you can also use semi-wholemeal flour)
- 1 tablespoon of salt
- 3 tablespoons skimmed milk powder
To make this bread successful, there are 2 secrets:the conditioning of the yeast and the rising of the dough .
For me, THE factor that will make everything the difference is taking the time to condition your yeast.
And believe me, I know what I'm talking about:I missed dozens of breads before I found this secret.
Conditioning yeast simply means dissolving your yeast with a little sugar.
1. To start, sprinkle 2 tablespoons of yeast over 600ml of hot water (equivalent to 2.5 mustard glasses).
To get an idea of the optimal temperature, the water must be warm enough to take a bath in.
To condition the yeast, I use a graduated container, like this clear glass measuring jug.
Indeed, it is much easier to measure the quantity of honey with a measuring cup. Which brings me to the next step…
2. Pour the honey over the yeast, until the level reaches 700 ml.
It's a handy trick that will save you from having to use another container to measure the honey.
The weight of the honey will "drown" the yeast in the warm water, which will facilitate the activation of the yeast.
3. Now let the yeast sit for about 5 min.
In the meantime, you can prepare the other ingredients in a stand mixer.
Your yeast is ready once it has formed a nice layer of frothy foam, as in the photo below:
4. Pour the water/yeast mixture into a stand mixer and add the flour, salt and skimmed milk powder.
You will probably need to use a spatula to scrape off the honey stuck inside your container.
Now install the dough hook on your device and turn it on.
Once the mixture takes on the texture of a dough, let the machine continue to knead the dough for another 6 min.
Note: you can also knead the dough by hand with a wooden spoon.
But, I must admit that to knead the bread dough easily, I prefer to use an appliance.
For example like this stand mixer with a stainless steel bowl.
You can stop kneading the dough when it looks like the one in the photo below:
5. Generously flour your hands and shape your dough into a ball.
If you find your dough too sticky, stir in 1/2 pinch of flour.
To prevent the dough from sticking to the container, lift the ball.
And rub it underneath with an oil-soaked paper towel.
Do the same with the walls of the container.
Return the ball of dough to its container. And cover it with stretch film or a tea towel.
Let the dough rest in a warm place...
For example on a hob while the oven is preheating.
Leave it until it rises and doubles in volume, as in the photo below.
6. Using your fists, gently flatten the dough.
There you go, your homemade bread dough is ready! Now you can do whatever you want with it :-)
To make homemade bread from this bread dough, all you have to do is shape the dough into the shape of 2 loaves.
Ideally, the loaves should be baked in a loaf pan lined with parchment paper.
Choose for example to cook them on this perforated plate to make 4 baguettes.
Warning: before baking, don't forget to cover and let the loaves rest a second time. It's very, very important!
Now bake the breads for about 27/30 min, at 185°C. Take care not to overbake the breads, as they may become too dry.
Leave to rest for 10 minutes before unmolding your loaves. If you let them cool completely in the pan, the underside may get clammy.
There you go, you have made your own homemade bread :-)
