Falafel is made from chickpeas and is packed with protein. Healthy and tasty, and also super simple to prepare.
Ingredients
For 2 persons
- a bowl of falafel
- a cup of spicy hummus
- 150 gr lamb's lettuce or leaf spinach
- 50 gr unsalted roasted almonds, roughly chopped
- 25 gr sesame seeds
- 100 gr buckwheat, boiled and briefly baked
- 1 medium roasted sweet potato
- 150 gr roasted cauliflower florets
- 2 roasted carrots
- 1 can of organic chickpeas, rinsed, drained and patted dry
- pinch of salt
- black pepper
- 1 tsp cumin powder
- 1 tsp turmeric
- half an avocado, sliced
- olive oil
Preparation method
- Preheat the oven to 220 degrees.
- Put the sweet potato cubes and carrot slices together with the cauliflower florets and chickpeas in a bowl.
- Pour generously with olive oil and mix well so that all vegetables are covered with a layer of olive oil.
- Line a baking tray with baking paper and spread the vegetables on it. Season with some salt and pepper and herbs. Roast the vegetables for about 20 minutes.
- Cook the buckwheat according to the instructions on the package.
- Now also bake the falafel balls according to the instructions on the package.
- Halve the avocado and remove the pit. Spoon out the avocado and cut the flesh into wedges.
- Now you can start making your falafel bowl. Start with the lettuce and just divide the rest of the ingredients over it. Sprinkle the sesame seeds and almonds on top as a topping.
