Two years ago, back from Thailand, I made this recipe that I make regularly at home,
Ingredients for 6 people :Thai rice (or other) 250g, olive oil 50g, garlic 60g, white onion 1 bunch, 2 eggs, fresh ginger 20g, fresh coriander 1 bunch, dried black mushrooms, nuoc-nam, salmon 300g, salt, pepper.
Cook the rice in a steamer, or failing that in boiling salted water,
Put the black mushrooms to rehydrate in a little warm water.
Peel and finely chop the garlic, do the same with the white onion, clean the tails and finely chop, chop the coriander, peel and finely chop the ginger, mix the eggs and beat them, cook in an omelet, let cool and chop in strips. Chop the mushrooms. Remove the skin and bones from the salmon, cut into 2 cm dice. Pan-fry quickly (1 minute), set aside.
In a wok, sweat the onions, garlic and onion tails in olive oil, add the rice, adding a little olive oil, then the rest of the ingredients except the omelette, the nuoc -nam, then add the salmon, coriander and omelette, salt and pepper.
Serve hot in individual bowls.
