According to Japanese tradition, yakitori is not served with any accompaniment other than drinks. But if you want to make your meal more filling, you can serve it with boiled rice. Here's the yakitori recipe.
Ingredients:
⅓ cup brown sugar
⅓ cup sweet rice wine (Mirin)
⅓ cup soy sauce
¼ cup rice vinegar
4-5cm fresh ginger root, peeled and thinly sliced
8 boneless chicken thighs
2 lemons, thinly sliced with skin on.
1 small bunch chives
2 tablespoons sesame seeds
This is what you do:
Mix brown sugar, rice wine, soy sauce, rice vinegar and ginger in a small saucepan.
Take cup from the pan and marinate the chicken in a small plastic bag. Let marinate in the fridge for 1-2 hours. Simmer the rest of the marinade to a thin syrup. Set aside.
Place the marinated chicken on a skewer with lemon slices between each piece. Remember to soak wood stitch before use. Grill over high heat, brush with the syrup marinade and turn the skewers occasionally until well caramelized and cooked through.
Put the skewers on a plate and sprinkle with grated lemon zest, chopped chives and sesame seeds.
