Grilled Cauliflower Quesadilla Recipe

This quesadilla with grilled cauliflower is tasty and nutritious.

Ingredients for grilled cauliflower quesadilla

For 4 people

  • 1 small cauliflower, sliced
  • 1 tbsp Santa Maria Red Jalapeño
  • 1 pack Santa Maria Tortilla Original Medium
  • 300 g mature cheese, grated
  • 100 g toasted hazelnuts, roughly chopped + a few extra for the garnish
  • 1 bunch fresh coriander
  • 1 tbsp oil

Preparation method

1. Roast the cauliflower in a pan until the cauliflower is lightly golden and softer.
2. Place a few jalapeños on each tortilla.
3. Mix the cauliflower, grated cheese and hazelnuts in a salad bowl, then divide the mixture over the tortillas, but only put it on one half of the tortilla.
4. Fold the tortillas and press lightly.
5. Fry the tortillas in oil over medium heat on both sides until they are crispy and golden and the cheese has melted.
6. Add some more jalapeños and sprinkle with the chopped coriander and the
hazelnuts.
7. Cut triangles from each quesadilla and serve!
