Recipe for cauliflower flammkuchen with 3 types of cheese

Cauliflower boring? Not really! With this vegetable, which is bursting with vitamin C, you can go in all directions. For example, make this flammkuchen.

Snack or lunch dish for 4 people
Preparation time 30 minutes + waiting time 40 minutes

  • 500 g cauliflower in small florets
  • 200 g Emmentaler
  • 200 g mature cheese
  • 2 eggs
  • 5-6 spring onions
  • 2 tbsp finely chopped garden herbs (parsley, chives)
  • 150 g fresh cream cheese natural
  • 150 g ham or bacon cubes
  • extra needed:baking tray with baking paper

Preparation method
Remove the leaves and stem from the cauliflower. Wash the cauliflower and pat dry. Grate the cauliflower coarsely, into a kind of coarse couscous or rice grains. Use a grater or a food processor for this. Boil the cauliflower in a little water with salt for 3 minutes. Drain well in a sieve or place the cauliflower grains in a clean tea towel, close and wring out the moisture. Grate both cheeses. Mix the cheese with the drained cauliflower. Beat in the eggs.

Preheat the oven to 180°C. Spread the cauliflower mass on the baking paper. Bake the dough base in the oven for about 25 minutes until firm and light brown. Meanwhile, cut the spring onion into rings. Mix the garden herbs with the fresh cream cheese and season with salt and pepper.

Remove the baking tray from the oven and cover the cauliflower base with the herb cream cheese. Sprinkle the spring onion and the meat on top. Bake the flammkuchen in the oven for another 10-15 minutes until golden brown and crispy. Serve immediately.
