You can vary endlessly with salads. How about a delicious Japanese radish salad with raw fish?
Starter for 4 people
Preparation time 20 minutes
Ingredients
• Juice of 1 lime
• 4 tbsp rice vinegar
• 5 tbsp mirin (rice wine)
• 2 tbsp soy sauce
• 1 tbsp chili oil
• 250 g radishes, with leaves
• 2 spring onions
• 400 g butterfish fillet or other firm white fish
Get started
Stir a dressing of the lime juice with the rice vinegar, mirin, soy sauce and chili oil.
Clean the radishes, pluck off the tops and chop finely, and halve or thinly slice the radishes. Cut the spring onion into 4-5 cm long strips. Pat the fish dry and cut into thin slices.
Divide the fish with the radish, spring onion and the leaves between the plates. Drizzle over the dressing and serve immediately.
