Recipe:summer fruit salad with chicken

Fancy a nice summer salad? Try making one out of strawberries! Like this summer fruit salad with chicken. The color will pop off your plate!

For 4 people, preparation time 25 minutes

Ingredients

  • 2 chicken breasts of 125 g each
  • 1 tsp paprika powder
  • 400 g mini mozzarella
  • 1 red onion
  • ½ head iceberg lettuce
  • 100 g arugula
  • 1 head of radicchio
  • 250 g strawberries
  • 150 g raspberries
  • 1 tbsp honey
  • 2 tbsp white
    balsamic vinegar
  • 4 tbsp grapeseed oil
  • 60 g roasted walnuts, chopped

Preparation

  • Sprinkle the chicken all over with salt, pepper and paprika. Heat some olive oil in a frying pan and fry the fillets for 10-12 minutes until golden brown and cooked through. Let cool and cut the chicken breasts into thin slices.
  • In the meantime, drain the mozzarella balls.
  • Peel and halve the onion, cut into thin strips. Clean the lettuce, cut the iceberg lettuce into strips and tear the arugula and radicchio into pieces.
  • Remove the crowns and cut the strawberries into pieces.
  • Mash the raspberries with a fork and mix with the honey, vinegar and grapeseed oil. Season the dressing with salt and pepper.
  • Arrange all salad ingredients decoratively on the plates and drizzle with the raspberry vinaigrette. Grind over some pepper and sprinkle with the walnuts.
