Ingredients for 4 people
- 150 g beef jerky
- Fish sauce dressing (see page 87 in Santé March)
- 1 red onion, in 2 mm rings
- 2 tbsp sunflower oil
- 50 g shallots, in 1 mm rings
- 2 hard, unripe mangoes, grated, julienne or thinly sliced
- 2 spring onions, in 2 mm rings
- 20 g coriander, roughly chopped
- 20 g Thai basil, roughly chopped
- 20 g mint, roughly chopped
- 100 g roasted unsalted peanuts, coarsely ground
Preparation
- Cut or pull the dried meat into small strips.
- Make sure the fish sauce dressing is ready; place the sliced red onion in this and let it steep for 10 minutes.
- In the meantime, heat the oil in a small frying pan and stir-fry the shallots for 3-4 minutes until golden brown. Remove from heat and let cool.
- Place the mango in a serving bowl. Mix here two thirds of all spices (coriander,
- Thai basil, mint), spring onion and fried shallots, plus the oil, fish sauce dressing and red onion. Mix well.
- Sprinkle with the rest of the herbs, the chopped peanuts and the strips of beef jerky and serve immediately.
