What are you going to eat tonight? Craving something vegetarian? How about a tortilla with mixed mushrooms, cabbage and cheese? A very nice combination!
Mushrooms naturally have a full umami taste. Did you know that this also works very well on a tortilla? Spice up the filling with the Santa Maria herbs, red cabbage, chipotle and cheese. And is there anything left? Put it in a container in the fridge and use it the next day as an addition to a meal.
Ingredients
For 4 people
Mixed mushrooms
- 500 g mixed mushrooms
- 2 tbsp oil
- 1 bag of Santa Maria Taco Seasoning Mix
- Chipotle cabbage
- 200 g red cabbage
- 2 tbsp olive oil
- 1 lime, juice only
- 1 tsp salt
- 1 tbsp chipotle sauce
Extras
- 1 pack Santa Maria Tortilla Original Small (8-pack)
- 100 g salad cheese
- ½ bunch of coriander
Preparation method
- Fry the mushrooms in oil until soft, but without browning them.
- Add the Seasoning Mix while stirring well, cook for another minute.
- Dice the red cabbage and mix with olive oil, chipotle sauce, lime juice and salt.
- Grill or heat the tortillas in the microwave.
- Place the chipotle, cabbage and mushrooms on the tortilla. Finish with some cheese and coriander.
