Ingredients
for 4 people
- 8 beet tortillas from No Fairytales
- 300 g canned diced tomatoes
- 150 g kale
- 175 g cherry tomatoes
- 1 orange bell pepper
- 2 red onion
- 100 ml white wine vinegar
- 150 g feta cheese
- 2 tbsp oregano
- salt and pepper
Preparation
- Preheat the oven to 200 ° C.
- Remove the skin of the red onion and cut the onion into rings. Place the onion rings in a bowl and add the white wine vinegar. Let alone until later use.
- Half the cherry tomatoes, remove the seeds from the bell pepper and cut the flesh into strips.
- Put the diced tomatoes together with the oregano in a food processor or blender and blend to a smooth sauce. Season with salt and pepper.
- Heat sunflower oil in a frying pan and stir-fry the kale for 4 minutes until it has wilted and most of the moisture has released.
- Gree the beet tortillas with tomato sauce and divide the stir-fried kale, cherry tomatoes, orange bell pepper strips and feta cheese on top.
- Bake the tortilla pizza in the oven for 8 minutes.
- Remove the tortilla pizza from the oven and garnish with the pickled red onion.
