Why only enjoy Mediterranean food on vacation? You can extend that holiday feeling nicely with the recipe for Mediterranean mashed potatoes.
Side dish for 4 people. Preparation time 30 minutes.
Ingredients
- 800 g flour potatoes
- 20 g pine nuts
- 50 g black pitted olives
- 50 g dried tomatoes in oil
- 1 handful of basil leaves
- 200 ml milk
- dried chili pepper (mill).
- Additionally needed:masher or pestle

Preparation
- Peel and wash the potatoes, cut them into pieces and boil them for 15-20 minutes.
- In the meantime, toast the pine nuts in a dry frying pan until light brown and let them cool on a cutting board. Chop them coarsely. Also finely chop the olives and tomatoes. Pile up the basil leaves and chop coarsely.
- Drain the potatoes and let it evaporate.
- Heat the milk with 3 tablespoons of olive oil in a pan or in the microwave.
- Squeeze or mash the potatoes until crumbly. Stir in as much of the milk mixture until you have a smooth puree.
- Mix in the pine nuts, olives and tomato. Season the puree with salt and chili pepper.
