Putting a tasty meal on the table might be extra fun if it doesn't take so much time and effort at all. Can you enjoy the summer evening for a long time. Chicken, coconut, lime.. what's not to love?

8 small pieces of chicken breast
salt and pepper
1 lime
3 tablespoons coconut milk
1 teaspoon sugar
1/2 teaspoon fish sauce
1 small red cabbage, which you cut thinly
2 spring onions, cut in match size
a little coriander, as much as you like
Preheat grill oven or griddle to medium. Season the chicken breasts with some salt and pepper and then grill them until they are just cooked. Turn them only once in between. In the meantime, grate some of the lime zest and set it aside. Then squeeze 1 tablespoon of lime juice from your lime, preferably immediately in a large bowl. In that bowl you then pour the coconut milk, the sugar and the fish sauce. And stir this all until the sugar is well dissolved. Then add the red cabbage (cut into pieces) and the spring onion. Mix everything until well distributed. Remove the grilled chicken from the oven or from the plate, sprinkle with the lemon zest you set aside. Divide the chicken between plates (4 plates/2 fillets per person) and sprinkle – to taste – some coriander over the salad of cabbage, lime and coconut milk and serve with or over the chicken.
