Rinse the apricots, pat them dry, cut them in half and remove the pits.
Pour the honey into a 28 cm non-stick pan with the cinnamon or vanilla, add the apricots and cook for 3 minutes over high heat, stirring, until they caramelize slightly.
Add the lemon juice and lime blossom essence, then mix. Serve hot.
