- Remove the rind and seeds from the melon and watermelon slice. Cut the pulp into thin slices. Wash and dry the nectarines, split them in half, remove the pits, cut the fruit into thin strips. Peel the kiwis and thinly slice them lengthwise.
- Arrange all the fruit on a large platter or 4 plates. In a bowl, mix the juice of the 2 oranges with the chestnut honey, vanilla sugar and orange blossom water.
- Drizzle the fruit with this sauce.
- Refrigerate until ready to serve.
- Garnish with mint leaves
