Ingredients for 6 people:
24 small bananas (mini) or 6 large
25 cl of squeezed orange juice
100g 55% dark chocolate
50 g red currants
10 mint leaves
10 cl of alcohol or orange liqueur
70g brown or white sugar
70g butter
10 cl of heavy cream
Chocolate melted in a bain-marie mixed with cream
Peeled bananas, browned in a caramel obtained with sugar and butter and flambéed with alcohol
Mint leaves nicely scattered all over
Destemmed currants to garnish
Orange juice is added after flambéing and reduced to obtain a syrupy sauce.
