Preparation
Start by preheating the oven to thermostat 6, 180°C.
After flouring them, brown the pork tenderloins in a pan with the butter and vegetable oil. Once the fillets are nicely browned, remove them and set them aside.
Then chop your shallots, and also put them in the pan (the same as for the pork tenderloins). Add a tablespoon of mustard, and maple syrup. You can simmer everything while continuing to mix for about 1 minute.
When the sauce has become very thick, you can put the fillets back in the pan.
Place everything in an oven dish, and bake for about twenty minutes.
Once out of the oven, you can decorate and flavor with herbs such as thyme.
