Extra virgin oil in particular contains good substances. Those substances, called polyphenols, are antioxidants. They have an anti-inflammatory effect, help against allergies and help protect your body against cardiovascular disease, cancer and diabetes. The younger the oil, the richer in antioxidants and the healthier.
You can taste olive oil from a dark glass
You should taste olive oil from a dark glass. That way you can't be unconsciously influenced by the color of the olive oil.
