Eric Werner and Mya Henry left their busy lives in New York to start a special restaurant on the Mexican peninsula Yucatán:in the open air, without walls, ceilings or electricity. Their pure dishes are enchanting.
While on vacation in Tulum, Eric and Mya fell in love with the place. They wondered what would happen if they didn't turn right to the airport. Their fantasies of leaving the hectic life in New York behind became increasingly concrete.
Hartwood is surrounded by nature and has no roof. There is no fully equipped kitchen but cooking is done on fire. 'The idea behind our recipes is not that different from the mantra in so many restaurants:to start with the best ingredients that don't need much. But if you take that idea too literally, you make it too easy on yourself. Our modest input, on the other hand, gives extra layers so that the clear and pure of the fresh ingredients comes out against a background of developed taste accords.
