To discover cassava, bet on this mashed potatoes that are really easy to make. Peel the cassava and remove its central fiber. Then cut it into large cubes and cook them for about 30 minutes in a large volume of salted boiling water. Drain and mash the cooked cassava into a puree, adding a little butter and single cream, as if you were making homemade mashed potatoes. You can then use this puree to prepare, for example, a shepherd's pie made from cassava.
Very easy to prepare, this cassava cake allows all fantasies. You can sprinkle it with grated coconut, flavor it with vanilla or some citrus zest, stuff it with jam… To prepare it, peel and grate 500 grams of cassava. Add 250 milliliters of milk, 2 beaten eggs and 125 grams of powdered sugar. Pour the mixture into a mold and bake for about an hour at 180°C. Leave to cool before enjoying.
You can also use cassava in the form of flour and make, for example, delicious sweet donuts. Melt 6 tablespoons of sugar in 15 cl of water, add 3 tablespoons of oil and 1 pinch of salt. Off the heat, pour 12 tablespoons of cassava flour and mix vigorously. Then add 4 eggs, mixing well between each egg. Bake small balls of this batter in very hot frying oil (eg grapeseed oil).
