The Coupe de France du Burger is a competition that rewards amateurs and professionals from all over France. The 2018 edition took place last week in Paris and brought together no less than 275 participants. At the end of the final, a jury decided between the 25 recipes proposed and it was Nicolas Willaume who received the famous title, thus succeeding the Parisian Vincent Boccara. The creation of this young pastry chef from the Gard, the “Childhood” visibly conquered the taste buds of the jury. According to them, said burger stood out with its original combination of mushrooms, hazelnuts and Beaufort cheese. "His burger is very simple, particularly well balanced and delicious," says Yoni Saada, the president of the jury. And if it bears this anecdotal name (“childhood” in VF) it is because the ingredients present in the sandwich are the same as his grandfather used to accompany the meat he prepared for him as a child… A beautiful family story!
“The hazelnuts bring a lot of indulgence and texture. They counterbalance the strength of the meat, the freshness of the lamb’s lettuce and the pep of mayonnaise and old-fashioned mustard”, explains the former pastry chef of the starred restaurant “L’Oustau de Baumanière”.
Delighted to have won this prize, Nicolas Willaume intends to use it as a professional springboard. In addition to his food truck, which travels between Codolet and Roquemaure, he would also like to find a place in town, in order to settle in a sustainable way. The new burger, which he will quickly add to his menu, should cost between 9 and 11 euros. So, if you want to taste it, you have no choice, you will have to take a trip to the south!
