Chef Rohini Atwaroe of Ter Marsch &Co was the winner of the Tastiest Hamburger 2020 during the Horecava. 'The Gojira' was unanimously judged the tastiest during the catering trade fair in Amsterdam RAI. This is a Korean burger served on an Asian steambun with a patty of dry aged rib eye and Japanese Wagyu meat. The burger is topped with sweet and sour mini cucumber and mini bok choy, bulgogi pulled pork and roasted pork belly, red onion, yuzu manuka honey, gochujang sauce and nori cassava chips. The pulled pork is stewed in a bulgogi marinade, a sweet complex sauce, and in the Yuzu Iki Beer, which gives it a sour and bitter taste. Gochujang is a fermented soy bean paste, which ensures that an umami taste is created due to the fermentation process.
According to the jury report, the presentation was carried out down to the last detail and a perfect overall picture was thought through down to the smallest details. The jury also judged the burger as original with a beautiful structure and very distinct and diverse flavors that are complementary to each other.
The award-winning 'The Gojira' is now available in the Rotterdam and Amsterdam locations of Ter Marsch &Co. The burger is served in an amazing way in an Asian steamer basket and comes in pairs.
