Mauritian fried mine or fried noodles

Ingredients for 6 people s

  • 75g of carrots
  • 75g cabbage
  • 75g of Chinese cabbage*
  • 200g chicken breasts
  • 3 eggs
  • 25ml oil
  • 75g bean sprouts
  • 2 tablespoons soy sauce
  • 2 tablespoons of red wine
  • 400g of fresh noodles (or dehydrated noodles, which must be soaked in water for 10 minutes)
  • chives, salt and pepper

* brèdes are the edible leaves of a plant

Preparation

Wash the vegetables, peel the carrots and cut them into matchsticks. Chop the cabbage and the Chinese cabbage leaves.

Cut the chicken into small pieces. Sauté the chicken.

Whisk the eggs, salt them and cook them in an omelette. Cut them into strips.

Sauté the vegetables in a wok, add the noodles and continue cooking. Add soy sauce and red wine.

Add the chicken and season with salt. Sauté the whole thing for a few moments.

At the end, sprinkle with chives and omelet strips.
