Zucchini stuffed with pine nuts

Ingredients for 4 people

  • 4 courgettes
  • 1 onion
  • 150g minced meat
  • 30g pine nuts
  • Garlic
  • 1 teaspoon of cumin
  • Herbs (basil, parsley, etc.)
  • Olive oil
  • Salt, pepper

Preparation

Start by peeling your onion and garlic clove, then finely chop them. In a saucepan, reduce the onions with a little olive oil over low heat.

While the onions are reducing, you can boil salted water and plunge the zucchini into it for about ten minutes.

Also brown the meat, after garlic, with the onions. Add the cumin, pine nuts and herbs. Salt and pepper to taste.

Remove the zucchini from the heat and drain them. Cut the top off each zucchini and empty them of their flesh. Mix the flesh with the pine nuts-cumin-minced meat mixture, and stuff the zucchini with it. Place your zucchini in your dish, cover them with their hat.

Place everything in the oven at thermostat 6 at 180°C for about 30 minutes.

Serve your dish hot.
