Preparation
Start by peeling the shallots. Then sear the steaks in a pan with a little oil. Salt and pepper to taste.
Once you have obtained the desired cooking, remove the steaks from the heat and put them in a baking dish. Cover with aluminum foil and place in the oven at a very low temperature, the aim being simply to keep the steaks warm.
Add a little water to the pan used to cook the steaks, and reduce the shallot by half with a little butter. Moisten with red wine.
When ready to serve, coat the steaks with the sauce.
