Want some advice? Don't throw them away. Grill them and eat them as an aperitif.
It's delicious and easy to make.
Pumpkin, pumpkin or potimarron, butternut squash... It's true that in winter, we make a cure!
And suddenly, we have plenty of seeds!
For a long time, I threw them away or put them directly in the compost...
Until a restaurant buddy told me how to easily turn them into delicious little snacks.
It's super simple to make and it's a healthy little treat to snack on as an aperitif.
The problem ? It's because you might not be able to do without it!
Here is the easy recipe for Homemade Roasted Squash Seeds . Watch:
Ingredients
- 150 g pumpkin seeds
- 2 tablespoons of sunflower oil
- Mixture of spices:oregano, thyme, chilli, paprika, garlic, salt, pepper
How to
1. Preheat the oven to 180°C.
2. Pour the spices into a bowl.
3. Add the oil.
4. Put the seeds in it.
5. Mix thoroughly to coat well with the mixture.
6. Place baking paper on a baking sheet.
7. Spread the seeds on it.
8. Place the plate in the oven and cook for 25 min.
9. After 10 min, turn them.
10. After 25 minutes, check if they are golden brown and remove them from the oven.
There you go, you have made your pumpkin seeds for the aperitif!
Easy, fast and efficient, right?

1. Mix the oil, garlic, sauce and salt in a bowl.
2. Add the seeds and mix.
3. Put the mixture in a dish lined with parchment paper.
4. Heat them in the oven at 140° for one hour.
5. Remember to return them regularly.
There you go, all you have to do is nibble them!
Are you more of a sweet tooth?
No problem!
Here is a very gourmet sweet recipe to savor these delicious seeds.
To do this, simply caramelize them. It's very easy to do :
Ingredients
- 100g dried pumpkin seeds
- 1 tablespoon cooking oil
- 2 tablespoons of sugar
- 1 pinch of salt
How to
1. Heat a tablespoon of oil in a nonstick skillet over medium-high heat.
2. Put the dried pumpkin seeds in the pan.
3. Add two tablespoons of sugar.
4. Add a pinch of salt.
5. Heat, stirring constantly, until the sugar is liquid and caramelized.
6. Put your little sweet seeds on a large plate and let cool.
Do you want to add a little original and raised touch?
So, mix 3 tablespoons of sugar, a pinch of salt, a pinch of cinnamon, powdered ginger, cumin and cayenne pepper in a container.
Then put in your still hot caramelized seeds. Mix well and enjoy!
If you prefer, you can roast your seeds in the oven, rather than in a pan.
When you remove the seeds from your favorite cucurbit, they are full of fiber.
Before preparing them, they must be cleaned well. But don't worry, it's simple. Here's how:
1. Remove all the seeds from the squash. In 1 min, it's done with this trick.
2 . Fill a bowl with water.
3. Put the seeds in it.
4. Rub them against each other to remove the fibers.
5. Lay out a clean tea towel and place the seeds on half of the tea towel.
6. With the other half of the tea towel, wipe them to remove the last fibers.
There you go, your seeds are all clean and all you have to do is roast them.
- You don't feel like or have the time to roast them? No problem!
You can also eat them fresh, after cleaning and drying them well.
- To remove the fibers around the seeds, it is also possible to spread them in a warm and dry place.
Why do that ? Because the fibers come off more easily when they are dry.
But obviously, it takes more space... and time.
- If you have time, you can also let them air dry.
Just spread them well in a shallow dish, near a heat source (radiator, stove, fireplace...).
- It is also possible to use a dehydrator, if you have one.
Be careful when you roast your seeds, they tend to pop like popcorn!
And this whether you roast them in the oven or in the pan.
Put a lid on your pan or dish. Otherwise, you risk burning yourself .
If your seeds have a hard shell, it is better to remove it.
To tell the truth, this is not necessarily the case for pumpkin or pumpkin seeds.
But it can be essential for pumpkin seeds.
Here's how to enjoy your little sweet or savory snacks.
Place the right seed between your front teeth. Bite to pop the shell.
And collect the seed in the middle. Yum!
But that's not all...
If you need pumpkin seeds for baking, salads or vegan spread, you're going to need plenty.
And there, no question of chewing them!
So here's how.
Start by grilling them in a pan. No need to add fat.
The goal is to dry the seeds so that they slip less. It's easier for the future.
Now grab a bowl and a pair of scissors.
Cut off the thicker end of the seed with the scissors.
Cut only a millimeter or two from the hull!
Then open the shell with your fingernails and remove the edible part.
Now you can dry your shelled seeds.
