This is probably the best known trick, but surely also the most effective.
Before pouring the cake batter into the mold, spread a little softened butter to coat the walls.
This allows the dough not to stick to the mould.
Thus, once baked, the biscuit comes off easily.
The parchment paper plays the same role, while avoiding the butter.
Perfect for those who avoid lactose.
For those who want to avoid putting butter on the pan, the springform pan is also an excellent technique.
How does it work?
It's very easy!
The mold has a kind of clip that makes it easy to close or open.
And it's airtight, so no risk of dripping dough.
Once the cake is baked, open the mold and take it out without it sticking to the walls.
A little less expensive than the springform pan, the silicone mold gives excellent results too.
Silicone is a non-stick material .
Thus, the dough does not stick to the mold even during baking.
Unmoulding becomes child's play.
Depending on the type of dough, the behavior is not the same during cooking .
Those that are high in flour shrink when cooked.
Unmoulding is therefore quite easy.
But those with little flour are very flexible.
The cake is therefore fragile which does not help the exit of the mould.
In this case, remember to grease the mold well or use non-stick paper.
It's true that you never know when is the right time to unmold a cake.
Should you unmold it while it's still hot or wait for it to cool?
If like me you still have doubts, here is a tip to stop asking yourself the question.
A cake with little flour whose texture is fragile unmolds when cold.
We take the mold out of the oven and let it cool for a few minutes before taking out the biscuit.
Conversely, a cake whose dough is very floury unmolds when hot.
Then, put it on a wire rack to cool.
If you forgot to butter the pan, it may be difficult to unmold your cake.
In this case, do not panic! There is one more solution to save you the day.
As soon as you take it out of the oven, put the mold in a basin of ice cubes.
With thermal shock, demolding is simplified .
On the other hand, be careful if you have a glass mould.
It might break with the temperature change.
