No joke. It's a tip from Hugh Acheson, chef and author of the book The Broad Fork. It is something different and it makes the lettuce tasteful.
Cook the lettuce for three minutes with a tablespoon of butter. Choose a firm lettuce type such as romaine. Once half of the water has evaporated, season the cooked lettuce with some salt, chicken stock and a teaspoon of lemon juice. Place the lettuce in a bowl and stir in some more butter. Roast some pine nuts in a pan and garnish the lettuce with it.
