Heat 1.5 kg of ripe tomatoes with two red chopped onions, 1 tbsp olive oil, 3 tbsp balsamic vinegar, pepper and salt in the oven at 200 degrees. Roast everything for 30 minutes and then put it in a saucepan.
Add half a teaspoon of cinnamon and a pinch of cayenne pepper. Puree with the immersion blender until smooth and then thicken the sauce over a low heat.
