Rabbit terrine recipe

If you like rabbit, discover this tasty and light terrine (rabbit meat being low in fat). To prepare it, chop the flesh of a whole rabbit using a mincer. Mix it with 500 g of sausage meat, 1 whole egg, 2 chopped shallots and 2 cloves of chopped garlic. Also add, if you wish, some shelled and crushed hazelnuts, as well as some herbs and spices:thyme, rosemary, cinnamon, nutmeg... Finally pour a small glass of cognac and a sachet of jelly for pâté. Pour this preparation into a terrine previously covered with a crépinette. Cook in a bain-marie for about 2 hours.

The fish terrine recipe

Another quick recipe to try:fish terrine. To prepare it, mix 500 g of different fish (cod, salmon, etc.) with 3 eggs and 20 cl of fresh cream. Season with salt and pepper then cook in a terrine in a bain-marie for 1 hour in the oven. Serve this terrine cold with a few slices of lemon, a salad of raw vegetables, a good homemade mayonnaise, a few slices of buttered bread... Do not hesitate to vary the fish to change the taste of your terrine.

The vegetable and cream cheese terrine recipe

To prepare this vegetable terrine recipe, you need zucchini, peppers and aubergines, as well as fresh cheese (goat cheese or bush cheese for example). First, cut the vegetables into thin slices and roast them in the oven until they are cooked and tender. Then mount the terrine in a cake tin, alternating the vegetable strips and the cream cheese seasoned with a few fresh herbs (basil, chives, coriander, etc.). Let cool overnight before unmolding the terrine. Serve chilled with a little vinaigrette flavored with olive oil, for example.
