The recipe for tacos

Tacos are one of the most famous dishes in Mexico. These are corn pancakes stuffed with meat (pork, beef…) and vegetables (tomatoes, peppers, corn…) well seasoned with spices. To prepare these corn cakes or tortillas, mix 400 g of flour, 1 teaspoon of salt, 80 ml of olive oil and 250 ml of hot water in a food processor. Let the dough rest for 1 hour. Divide the dough into twelve balls and roll them out to about 20 cm in diameter. Cook these pancakes for 2 minutes in the pan, turning them over halfway through cooking. Then fill them with the preparation of your choice.

Chili con carne recipe

There are a thousand and one ways to prepare chili con carne. Here is an express version. First, cook 400 g of minced beef for 5 minutes. Then brown 2 chopped onions and 2 green peppers in strips for 5 minutes. Return the meat to the skillet. Add 1 teaspoon of chilli (more if you like spicy dishes) and 2 tablespoons of dried oregano. Then add 1 large can of drained red beans, 1 large can of corn with its juice and 1 large can of crushed tomatoes with their juice. Add salt and pepper. Simmer for 10 minutes and serve hot with rice.

The recipe for guacamole

Ideal as an aperitif or in verrines, this mashed avocado is very easy to prepare. Mash the flesh of two very ripe avocados by adding the juice of ½ lemon (green or yellow). Then season the guacamole to your taste by adding garlic powder, cumin, paprika and chilli powder, a few drops of Tabasco… Don't forget to lightly salt and pepper, and don't hesitate to taste several times to find the perfect seasoning. Serve chilled with a few tortilla chips.
