Potato stuffed with anchovies

Ingredients for 8 people:

  • 500 g of anchovies
  • 1 tablespoon of oil
  • 1 lemon
  • salt, pepper
  • 5 sprigs of parsley
  • 300g sausage meat
  • 1 small onion
  • 1 clove of garlic
  • 3 tarragon leaves
  • a hint of Cayenne
  • 8 large potatoes
  • 100g butter
  • 25 cl of meat broth.

Development:

  • Scale, gut, wash the anchovies; take the fillets, cut them into fine pieces, put in a deep dish, sprinkle with oil and lemon juice, add a sprig of chopped parsley, salt and pepper; leave to marinate for one hour.
  • Prepare the stuffing:mix the chopped onion and garlic with the remaining parsley and tarragon into the sausage meat; add the diced anchovies and the cayenne, adjust the seasoning with salt and pepper.
  • Peel and wash the potatoes, cut off one end, hollow out the vegetables with a special utensil or with the handle of a spoon; put what you remove in a buttered oven dish, salt and lightly pepper
  • Fill the hollowed potatoes with the stuffing, put the cut end back to close them; lay them side by side in the dish; moisten with the broth, sprinkle the rest of the butter in hazelnuts; put in medium oven for 35 minutes, basting several times.
  • Serve in the baking dish.
