Peel the potatoes, wash them and cook them for 20 minutes in salted boiling water.
At the end of this time, put them in the bowl of a food processor with the chopped herbs, whole eggs, cream, salt and pepper.
Heat a small lightly oiled non-stick frying pan (blinis style), place a small pile of dough, flatten it with a spatula and cook the galette for 2 to 3 minutes on each face. Repeat until the batter is used up.
Keep the patties warm.
Serve with scrambled eggs and smoked salmon.
