First we will make 20 small pancakes, put the flour in a bowl and make a well in the center. Add a pinch of salt, the eggs and mix with a whisk, pouring in the milk. Add melted butter and beer. Stir and leave for 2 hours.
Make 20 small pancakes in a blinis pan. Put these pancakes on a work surface.
In a pan of boiling water, immerse the tied chives and remove them after 1 minute 30.
In the center of the pancakes put 5 g of fresh cream and 4 strips of sea urchin. (To extract the strips from the sea urchins, open them, pass them under running water to clean them, then using a small spoon pass under the strips.)
Close the pancakes using the chives as a string.
Put the crepes on the oven plate (th.5) for 3 minutes.
Arrange them on 4 plates and serve hot.
