Now preheat your oven to thermostat 5, 170°C.
Place the tomatoes in boiling water for 2-3 minutes. Then remove them, then rid them of their skin.
Take one half of the tomatoes and cut them into two halves. Then place them in your pie pan, rounded side towards the bottom of the pan.
For the other half of the tomatoes, cut them into cubes and put them in a salad bowl. Add a teaspoon of balsamic vinegar and the Provence herbs, then mix. Salt and pepper to taste.
Then spread the mixture over the tomatoes in the tart pan.
Unroll your puff pastry, then brush it with mustard. Then spread it over your tomatoes, mustard side down, in the pie pan.
Bake for 25 minutes.
