Preparation
Peel, wash and grate the potatoes.
Chop the parsley and the garlic cloves.
In a bowl, combine the grated potatoes, eggs, parsley, garlic, salt and pepper.
In a frying pan, heat the olive oil and pour the mixture.
Cook for about 15 minutes, then turn over and cook for another 15 minutes.
